Easy Truffle Roasted Potatoes

Are you ever sitting in a bar and order a burger and look at the side options and there’s an option to upgrade to truffle fries for a cost? It’s something I will pay the additional $2-3 at a bar to have the tasty deliciousness instead of the standard fries you get as a side. We have cultivated a way to make this delicious bar snack at home in a very easy way. The secret is just adding truffle oil at the end. This easy recipe can bring that delicious bar food right to your very own kitchen. Ingredients:

  • 1-2 lbs potatoes (any kind will do) diced into approximately 1-inch cubes

  • 1/4 cup olive oil

  • 1 tbsp baking soda

  • Salt

  • Pepper

  • 2 tablespoons garlic powder (or as much as your heart desires)

  • Truffle oil for finishing

  • Shredded parmesan cheese

Start by taking your diced potatoes and place them in generously salted water and the baking soda. I personally do this for about 1-2 hours before cooking and heat it up on medium heat on the stove for the last 15 minutes. While this step isn’t 100% necessary, I would at a bare minimum at least set the potatoes in water for about 15 minutes while the oven is heating up. This helps keep the inside of the potatoes soft while the outside gets nice and crispy.

Preheat the oven to 425 degrees.

Drain the water from the potatoes and dry them with a rag to get as much water off of them as possible.

Place potatoes in a mixing bowl with garlic powder, olive oil, and some additional salt and pepper and mix it so all potatoes are generously covered in olive oil adding more oil if you feel necessary.

Dump potatoes onto a baking sheet and place into the heated oven for 20 minutes, remove and stir around, and then place back into the oven for approximately 15 more minutes or until potatoes are to your desired crispiness.

Once done sprinkle some shredded parmesan cheese over it and drizzle your truffle oil over the potatoes. A little goes a long way in this scenario. Enjoy!
